I have a "bird" setting on the preset function on this Nikon 7200 I leave attached to the big lens.  It's auto ISO, F5.6 (widest aperture) at 1/800th.  That's just so I can pick it up and shoot without thinking about it.  Instead of switching to Manual (like I normally shoot) I just left it on here.  I dialed in some various shutter speeds and adjusted the exposure by using the EV button.

Not my usual method of shooting but it works.
